Gluten-Free Vegan All Purpose Flour Blend
If you’re like me and you are both vegan and gluten-free, finding a flour blend that works well, so you can still enjoy some of your favorite desserts and breaded meals can prove to be a complicated task.
For me, I often found store bought flour blends to be extremely grainy because they consisted largely of corn flour.
When I started trying to make my own flour blends, I found them to be too heavy when I used flours like sorghum and buckwheat. Or too gummy and sticky when I tried to use them blends with certain vegan ingredients like flax eggs.
Let’s face it, gluten-free baking in itself if hard. Finding the right balance of ingredients with starches and proteins and things that hold it all together can be extremely overwhelming, especially to a newbie.
Speaking from personal experience, there was a time when I was ready to give up on ever enjoying cake, muffins, and pizza again without paying a serious price.
Though I am not convinced that there is such a thing as the perfect gluten-free vegan flour blend, I believe I have found one that I really like. I found this non-vegan flour blend, and started playing around with ways to make it vegan. If you’re not vegan, I think you should give the original recipe a try.
If you are like me and have serious food allergies or you just really care about the environment and the animals, I made a modified version of this flour blend that replaces milk powder with soy milk powder or coconut milk powder.
I also opted for psyllium husks instead of xanthan gum because people in my family happen to be sensitive to xanthan gum.
Flour Blend Uses
So far, I have used this to baking apple and cinnamon muffins, tortillas, and fried sesame oyster mushrooms. I am experimenting more each day with this flour blend to see what else I can use it for.

Recipe: Gluten-Free Vegan Flour Blend
Makes 1 cup.
43 grams rice flour (finely ground)
25 grams cornstarch
24 grams brown rice
21 grams tapioca starch
20 grams dry soy milk powder (Coconut milk powered can be used for sweet dishes.)
4 grams potato starch
3 grams psyllium husks
With a fork or a whisk, combine all ingredients in a large bowl and whisk together until they are well combined. It’s important to make sure everything is combined completely so that each ingredient is evenly dispersed throughout the flour blend.
Use immediately or store in an airtight container until ready to use.
If more than 1 cup of flour is needed, multiply each ingredient by number of cups needed or if you want to make it in advance to store in a designated airtight container.
